The photographers have then provided their most iconic prints to inspire the unique culinary creations that you will taste tonight. Whether they were inspired by the beautiful imagery or the strong message, we hope you will enjoy reflecting on the beauty of our shared planet and the important position we play as stewards of the earth. Pairing #1: The Print Location: Ol Pejeta Conservancy, Kenya About: “Sudan, the last living male northern white rhino is comforted by Joseph (JoJo) Wachira, moments before he passed away in March, 2018. When I arrived, Sudan was surrounded by the people who had loved him and protected him. It was silent, except for the rain falling, a single bird scolding, and the muffled sorrow of his caretakers. Watching a creature die—one who is the last of its kind—is something I hope never to experience again. It felt like watching our own demise. We are witnessing extinction right now, on our watch. Poaching is not slowing down. If the current trajectory of killing continues, it’s entirely possible that all species of rhinos will be functionally extinct within our lifetimes. Removal of a keystone species has a huge effect on the ecosystem and on all of us. These giants are part of a complex world created over millions of years, and their survival is intertwined with our own.” – Ami Vitale Pairing #1: Chef Matthew Faust Matthew Faust was born and raised in Toronto, and has been involved in the hospitality industry for over 10 years. He joined Brodflour in 2018 and took over as operating partner in 2020. Matthew oversees the growth of Brodflour urban mill and bakery, with the goal of reintroducing fresh flour into consumers diets and supporting the local and regional grain economy. Pairing #1: Photographer Ami Vitale Ami Vitale is a Nikon Ambassador and National Geographic photographer who has travelled to more than 100 countries. Pairing #2: Chef Matt Casola After nearly 17 years working in kitchens throughout the city, Chef Matt Casola emerged on the scene and gave everyone is Sul Tavolo. What began pre-pandemic as a special events company turned into the cities, most delectable, and sought after Burrata. Pairing #2: Photographer Viktoria Haack Viktoria Haack is a Nikon Ambassador and multi genre photographer. She is deeply influenced and inspired by nature. Pairing #3: The Print “This is a wild horse of Nova Scotia’s Sable Island. The island itself is shifting and changing all the time- and it’s reflective of a healthy ocean. Walking the beaches of Sable Island can be a litmus test, with plastic washing ashore- everything from balloons to plastic water bottles. Still, Sable Island is one of the most beautiful places on earth, where wild horses, grey seals and marine birds work in tandem to create rich biodiversity. Ocean currents and rising temperatures, and the resulting affect on marine vegetation and marine life – all impact Sable Island.” – Sandy Sharkey Pairing #3: Chef Devan Rajkumar Chef Dev is a regular on Cityline, and has partnerships with Food & Drink, eTalk, The Morning Show, Breakfast Television, Canadian Tire and more. Pairing #3: Photographer Sandy Sharkey Sandy Sharkey is a wildlife photographer, advocate and guest speaker dedicated to encouraging public awareness and engagement through her images. For over ten years, Sandy has focused on the plight of wild horses: the misfits of the wild, struggling to survive under the pressures of mankind. Pairing #4: The Print Location: Amboseli, Kenya, 2023 About: “Elephants need significant range to browse and as traditional travel routes get cut off by human habitation, they have less and less room to live and feed. Climate change only puts greater pressure on them to make more of less. I’m not sure if this fits into Climate Change or Environmental Inequity, but these things seem to be very intertwined. These elephants were photographed on the dry lake of Amboseli during one of the worst droughts in recent memory.” – David duChemin Pairing #4: Chef Trevor Lui Trevor Lui has helped co-create and develop some of Toronto’s foremost food brands, Kanpai Snack Bar, Yatai Japanese Street Food, Shook Noodle, La Brea Food, Fat Rabbit and stackt market collaborations, Makan Noodle Bar, Pop Kitchen, BaoBird and the newest creation, Superfresh Night Market. Pairing #4: Photographer David duChemin David duChemin is a humanitarian and wildlife photographer, best-selling author, and international workshop leader. He’s done assignment work in Ecuador, El Salvador, Dominican Republic, Haiti, Ethiopia, Malawi, DRC, Rwanda, Uganda, Bangladesh, among others. His work can be found at DavidduChemin.com Pairing #5: The Print “This image was first featured in Time, Nat Geo, etc., helping spark the movement behind the Spirit Bear Youth Coalition. It was an image that helped inspire more than six million young people to care for a rare bear on Canada’s west coast. With an assist from Dr. Jane, today the spirit bear is saved, with the entirety of its last intact habitat set aside for protection.” – Simon Jackson Pairing #5: Chef Amanda Ray Amanda Ray is the executive chef for the Drake Devonshire Inn located in Prince Edward County, Ontario. Pairing #5: Simon Jackson At the age of 13, Simon Jackson founded the Spirit Bear Youth Coalition. For his efforts, he has been named a Hero for the Planet by Time Magazine and was the inspiration for the movie Spirit Bear: The Simon Jackson Story. Simon works to advance nature literacy as the co-founder of Nature Labs. Pairing #6: The Print Location: Iceland About: “Melting glaciers cause rivulets to form as the water makes its way out to sea along the southern coast of Iceland near Dyrholaey. The country of Iceland is leading the fight against global warming with the use of clean, renewable geothermal resources.” – Deanne Fitzmaurice Pairing #6: Chefs Nick Bentley & Patrick Kriss It was in 2014 that Chef Patrick Kriss invited Chef Nick Bentley to be a part of his team at Alo. After graduating from Georgian, Bentley moved to Toronto to work for Oliver & Bonacini. Working as Junior Sous Chef at Canoe Restaurant, Nick was guided and educated by highly respected Chef Anthony Walsh and Chef du Cuisine John Horne. Nick worked through various stations at Splendido Restaurant under Chef Victor Barry and Acadia Restaurant under Chef Patrick Kriss. Pairing #6: Photographer Deanne Fitzmaurice Deanne Fitzmaurice is a Pulitzer Prize-winning documentary photographer and a Nikon Ambassador. Pairing #7: The Print Location: Jasper National Park, Canada. About: “An eerie scene from an unusually warm night up on the Athabasca Glacier. We spent hours wandering among the icefall, marveling at the whimsical ice all around us and came upon this stunning supraglacial pool, which we documented for quite some time.” – Paul Zizka Pairing #7: Chef Carl Heinrich Co-owner of Richmond Station in Toronto, Carl Heinrich is the winner of the Food Network’s Top Chef Canada Season 2, and recipient of the 2015 Pinnacle Award for Canadian Chef of the Year. Pairing #9: The Print The Whole Pod // Steve Woods // 2022 – Baja – Mexico “The famously inquisitive matriarch Quetzali (belly towards us) travels with her pod along the coast of Baja California Sur, Mexico searching for prey in the form of elasmobranchs (sharks and rays). The pod is notorious for cruising up the coast hunting pelagic sharks, bull sharks and schools of Mobula rays in the sea of Cortez. As a photographer, seeing such an enormous, enigmatic and sentient being bring her family to investigate and interact with you is not only humbling but a once in a lifetime wild experience. I count myself incredibly lucky to be able to witness and document these animals who are under constant pressure from human activity.” – Steve Woods Pairing #9: Chef Alida Solomon Alida Solomon‘s Tutti Matti has received both local and national awards, including the prestigious 2009 “L’Eccio D’Oro” for Osteria of the Year (an award previously won by Mario Batali and Alain Ducasse).
